150g Arla Havarti cheese cubed
150g Arla Kefalotyri cheese cubed
300g celery diced
250g grapes cut into halves
Salt
Freshly ground pepper
1 tsp prepared mustard
2 tbsp white vinegar
2 tbsp olive oil
2 tbsp almond oil
½ Romaine (Cos) lettuce, thoroughly rinsed and hand-torn into pieces
1 lollo rosso lettuce, thoroughly rinsed and hand-torn into pieces

On a cutting board, cut all cheeses into small cubes. Transfer in a salad bowl. Add the diced celery, the grapes, and the hand-torn Romaine and lollo rosso lettuces. Toss thoroughly. To make the dressing, in a small hand mixer or one-beater mixer bowl, whisk together the prepared mustard, olive oil, white vinegar, almond oil, salt, and freshly ground pepper. Drizzle over the salad and toss. Serve in individual plates. Multi-grain bread makes an ideal companion for this salad.
