Delicious beet with its characteristic sweet flavor is rich in betaine, a blood-cleansing component. Moreover, it is a great source of Vitamin C and contains lots of antioxidants. The beetroot is one of the sweetest vegetables, since its sugar content exceeds that of carrots and corn. Beet roots are not the only part of this plant that is edible: beet greens are edible as well!

The beetroot is eaten boiled as a salad but it is equally tasty when pickled. Garlic, olive oil, and lemon -or vinegar- are the beetroots’ ideal companions. Beetroots are the perfect ingredient for velvety as well as chunky soups.

To keep beetroots fresh in the fridge for a longer time, trim the stems, leaving 2 cm of stem on top of the beet. Place beets without washing them in an airtight container or in a plastic bag and refrigerate for up to 3 weeks.
