125g Lurpak butter
Zest of 1 lime
Zest of 1 lemon
Zest of 1 orange
2 tbsp fresh oregano finely chopped
2 tbsp fresh thyme finely chopped
2 tbsp parsley finely chopped
2 tbsp chives finely chopped
Freshly ground pepper
In the bowl of a mixer add the butter, zests of lime, lemon and orange, the finely chopped fresh oregano and parsley, the 2 tbsp chives, salt and freshly ground pepper. Use the wire whip attachment to whip all ingredients together as long as possible to obtain a smooth butter.
Wrap butter in cling film. Twist cling film edges to seal and give your wrapped butter the shape of a log. Refrigerate until cold and solid.
