Kalathaki Limnou cheese the tasty

Kalathaki Limnou is a white brine cheese in the shape of a small basket with scattered small holes filled with drops of liquid fat. It is produced from sheep’s and goat’s milk.

 

Kalathaki Limnou is a white brine cheese in the shape of a small basket with scattered small holes filled with drops of liquid fat. It is produced from sheep’s and goat’s milk.
It has a unique rich flavor similar to that of feta cheese, but a bit milder. Its name comes from the wicker baskets (kalathakia) hand woven from chaste tree branches. In the old days, it was placed in those wicker receptacles to have it drain. It is an artisanal cheese which has been elevated to the enviable status of a PDO (Protected Designation of Origin) product.
Kalathaki Limnou curdles at a temperature of 33°C-34°C. After 45-60 minutes, it is cut into small soft pieces and placed in special basket-shaped, ridged plastic molds (modern-day kalathakia), where it is left until it acquires its final characteristic shape.
Although a crowd pleaser when served as a table cheese it is also sensational as an ingredient in other Greek traditional recipes.
